I've recently just made a graphgan pattern on here and also got the part where it says what to do on each row, so a written one. My question is, when reading the written part and I work the first row right to left, do I flip my work and start row 2, working right to left again? And just continue flipping my work and doing each row as it says?

Welcome!
The written pattern follows the standard way of working crochet, so if you're working a regular single crochet stitch, yes, you'll flip your work for each row; the pattern is written that way. The exception to that is Tunisian, which is worked right to left and then the "return" row is worked left to right. So the short answer is that as long as you're working single crochet, work proceeds as normal, from right to left for every row.
