Welcome!
If you're doing a regular single crochet stitch, just work it as usual, going in one direction and then the other. If you're following a graph, you'll want to read it right to left and then left to right, so every odd row is read right to left and every even row is read left to right. (Unless you're left-handed, in which case that's reversed.)
If you're working from a word chart, every other row is already reversed for you.
There's no need to cut and start over. Though I've seen that before, it's only been the case with specific stitch patterns that are meant to go only one way. (And think of all of the ends you won't have to weave in!
)
