When you get your graph, how do you know how many arches across you need? Like for the foundation chain and for the image itself?

Welcome!
If you've made your chart with the freePatternWizard, once you choose the number of turning chains you want for your pattern, the PDF you download will contain the number of foundation chain stitches.
The foundation calculation is for the foundation chain itself, but that will also be a true amount for the entire pattern. So if your foundation chain is calculated for 50 blocks, then it will be correct for 50 blocks, including your turning chain, so you'll be able to properly work your pattern from the chart.
