Trying to create a cross stitch pattern with just symbols and lines could someone point me in the right direction to start one please and thank you.

Welcome!
If you're using the freePatternWizard, this version of the software will only allow full cross stitches. I'm sorry to say there's no backstitching. This will likely be addressed in a later version of the software.
