What is a good starting place for a lefty?

Please be sure you're logged in when you go to create your pattern. If you're not logged in, you won't get the PDF option, which is where you can set your output for colors and/or symbols.
When logged in, down at #7 it should give you a choice of Pattern on Screen or Pattern in Pdf Format. You'll want to choose the latter (which is the default); PDF format is where you'll get the option to choose "Symbols Only" or "Both Colors and Symbols."
If you're not logged in, you won't get the PDF option, so that will default you to colors only.

If you haven't found it already, there should be a button at the top of the page that says patterns, click create pattern and that will take you to the pattern wizard page where you can upload your image and make your selections.
If you're a premier member, you can customize certain parts of your pdf, as well as having access to other benefits.

I'm not sure what you're asking. If you're making a pattern 80 stitches across, that is your stitch count and it will be the same for all rows; otherwise, your patterns would have shorter and longer rows here and there and would not be even, which would defeat the purpose of making the pattern in the first place.
